Mash Steps Name Description Step Temperature Step Time Saccharification Add 17.41 qt of water at 161.1 F 152.1 F 75 min Sparge Step: Remove grains, and prepare to boil wort Mash Notes: Brew in a bag method where the full boil volume is mashed within the boil vessel and then the grains are withdrawn at the end of the mash. No active sparging is required. This is a medium body beer profile. Carbonation and Storage
12/22/2012: Brewed this up on the stovetop as a BIAB for part of the Big Stupid Winter Brew Party. Overshot the gravity slightly. To cool down to 60* it was placed in the fermentation chamber.
12/23/2012: Pitched with one package of US-04 and fermented at 64*.
12/29/2012: Temp in the basement was so cold that the chest freezer dropped to 58*. Need to get that ceramic light.
1/3/2012: With such a high gravity it seemed ferementation should not be done yet and it visibly hasn't moved for a while now. I opened it up and to my surprise I was sitting at 1.018 putting us at 10.1%ABV so I'd say it's done. Going to leave for another few weeks before racking. Still pretty hazy but could be a nice copperish color, maybe even red. Pretty simple tasting, has some cleaning up to do. A bit harsh as of right now but a year of conditioning should help with that.
